We’ve been vacationing in Yellowstone and Grand Teton National Parks for the past 5 days. This is a beautiful place, but not exactly vegan friendly. Matt made a key discovery a few weeks ago in the Outdoor Herbivore freeze dried food collections. We ordered a few packs for dinners and thats proven to be an excellent idea! Here are a few pics:
Blackened Quinoa Salad (with black beans, corn and peppers)
Sunny Sunflower Salad with quinoa, corn, sunflower seeds and pepper. Just add cold water, and serve with tortilla chips:
Cold chia salad (on the left) and spicy tomato rice with peanuts (on the right):
Using Matt’s camping stove, we just had to add water and the packets of olive oil included, cook for a few minutes and that’s it! Two of them didn’t require cooking; just add cold water and sit for 10 minutes.
